Current World Record Holder in Chicken Wings he is recognized as the Southern States Chicken Wing Eating Champion. In addition, "The Goose" holds a Canadian Eating title as the National Canadian Back-Bacon Eating Champion. He is the Former American Meatball Eating Champion, the National Potato Latke, Strawberry & Italian Sausage & Cheeseburger Eating Champion. Goose also toured Japan in December of 2007 as a member of Team USA, where he faced off against the mighty Yamamoto and nearly defeated the great Japanese Food Warrior.

In his first attempt at competitive eating in 2006, Gilbert shocked the competitive eating community by decisively defeating several highly regarded Professional Eaters at the 2nd annual World Italian Sausage Eating Championship in East Boston. Gilbert took a very close second to legendary Eater "Gentleman" Joe Menchetti, he came back in 2007 to smash Menchetti's record. Gilbert has received many accolades and has been recognized as the "cream of the crop" since he first bellied up to the table in July of 2006.

This 26 year old Counselor from the State of Massachusetts has smashed both the World Record in Meatballs, Potato Latke's and has consumed 46 Hard-boiled Eggs in five minutes to win the National Hard Boiled Egg Eating Championship in Brick, New Jersey. In addition Gilbert holds world records in Strawberries where he consumed 9lbs in 7 minutes and also is the World Record Holder for Black Beans where he established a new World Record by consuming 11.1 Lbs of Beans in 10 minutes.

Gilbert, is an Army Reservist who works as a Combat Medic has a disciplined and devastating style of eating which has earned him the honorary nickname of the "Green Beret of Grub." He is 6' 2" 190 lb.
